Today, I’m sharing an elegant and moist Almond Ricotta Cake recipe that’s perfect for any occasion. With a delicate crumb and rich almond flavour, this cake pairs beautifully with a cup of coffee or tea. It’s a treat you’ll want to make again and again!
WHAT YOU NEED
200g almond flour (finely ground almonds)
200g ricotta cheese (make sure it’s well-drained)
150g granulated sugar
125g unsalted butter, softened
100g all-purpose flour
3 large eggs (about 150g total)
1tsp vanilla extract (5ml)
1tsp almond extract (5 ml)
2tsp baking powder (about 10g)
1/4tsp salt (about 1.5g)
Zest of 1 lemon (about 1tsp)
50g sliced almonds (for topping)
Icing sugar (for dusting, optional)
METHOD
1. Preheat your oven to 180°C (350°F). Grease a 23 cm (9-inch) round cake pan and line the bottom with parchment paper.
2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy—this should take about 2-3 minutes. It’s best to use an electric mixer for this step to ensure a smooth texture.
3. Add the eggs one at a time, beating well after each addition. Then, gently fold in the ricotta cheese, vanilla extract, almond extract, and lemon zest. Mix until everything is well combined.
4. In a separate bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, folding gently until a smooth batter forms.
5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Sprinkle the sliced almonds evenly over the top for an added crunch.
6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean. If the cake starts browning too quickly, cover it loosely with aluminium foil for the remaining baking time.
7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Dust with a light layer of icing sugar if desired, and serve!
This almond ricotta cake is delightful on its own, but you can also serve it with a dollop of freshly whipped cream or a spoonful of fruit compote. It’s lovely with berries, stone fruits, or even a drizzle of honey!
