Beef stew is one of those classic comfort foods that has been around for centuries, tracing its origins back to early humans who would simmer meat and vegetables together over an open fire.

Stews were a practical way to stretch limited ingredients and create a nourishing meal, especially during cold weather. Today, beef stew remains a staple dish in many homes, offering the same comforting warmth and rich flavours. This version is perfect for cosy dinners, with tender beef chunks and hearty vegetables slow-cooked in a savoury broth.

WHAT YOU NEED

800g beef chuck, cubed

30g all-purpose flour

30ml olive oil

150g yellow onion, diced

100g carrots, sliced

100g celery, sliced

300g potatoes, cubed

2 garlic cloves, minced

500ml beef broth

200ml red wine (optional)

50g tomato paste

2 bay leaves

2g dried thyme

3g paprika

Salt and pepper to taste

30g fresh parsley, chopped (for garnish)

METHOD

1. In a bowl, toss the beef cubes with flour, salt, and pepper to coat.

2. Heat olive oil in a large pot over medium-high heat. Add the beef in batches, searing each side until browned, about 5 minutes. Remove and set aside.

3. In the same pot, add onions, carrots, celery, and garlic. Cook until softened, about 5 minutes.

4. Pour in the red wine (if using) and scrape up the browned bits from the bottom of the pot. Let the wine simmer for 2 minutes to reduce.

5. Stir in the tomato paste, then return the beef to the pot. Add the potatoes, beef broth, bay leaves, thyme, paprika, and additional salt and pepper. Bring to a simmer.

6. Cover the pot, reduce the heat to low, and let the stew simmer for 2-3 hours, stirring occasionally, until the beef is tender and the flavours have melded together.

7. Remove the bay leaves, adjust seasoning if needed, and sprinkle fresh parsley on top before serving.

STORAGE

Refrigerate: Allow the stew to cool completely before storing. Transfer to an airtight container and refrigerate for up to 4 days.

Freeze: For longer storage, freeze the stew in freezer-safe containers for up to 3 months. To reheat, thaw in the fridge overnight and warm gently on the stovetop.
